No recipes you say? YES, No Recipes!

If there are more than four ingredients for anything, I won’t do it. And if there are less than 3 or 4 ingredients, that can’t be much of a recipe.
In my mind, things that you already have and use all the time like salt & pepper, butter/oil, ketchup and mustard don’t count. Things like brown sugar, paprika, garlic powder etc. do count because you don’t use them all the time. This way I can keep it simple and easy so that I am more inclined not to shy away from grilling something I would be afraid of messing up. I love watching Steve Raichlen on TV but I have to scratch my head when I see him line up 17 pinch bowls of stuff for a mop sauce.

So, with no, or minimal recipes to think about, I can grill just about anything and everything and relax and enjoy the therapeutic Zen feeling one gets when embracing this culture.

This is why it’s called…”Healthy Grilling”.

People keep asking me “Hey Dave, what’s so dangerous about healthy grilling?”
Here’s my answer: “Good grilling is addictive and the food is to die for”.

With rain predicted for the next few days here in Boston I figured I should fire up the Performer and cook a meatloaf AND
 roast a 4 lb. chicken at the same time for sandwiches during the week, since the temps and the times were about the same for both.

Way back when, some 25 years ago, I was shocked to see how much fat there was in the drip pan first time I used side baskets and roasted a chicken. And I’ve been addicted to grilling ever since for what appears to be a very good reason. My health!
 
I got a steady 350 degrees going with my water cup and grate thermometer to help things along.

I poke holes in the bottom of the loaf pan so that the fat from the meatloaf drains into the drip pan too. With the moisture from the water cup both the chicken and meat loaf come out super juicy and will keep me happy during the rainy days ahead.
